Fun with bananas

Important life lesson* #2: if you get a bunch of green bananas and leave them inside a tightly-closed plastic bag, they tend not to ripen. However, if you take them out of the bag, they will ripen to a yummy yellow pretty fast. Either that, or my timing was just right.

*Not really an important life lesson.

(Despite the fact that I'm a psych major, I might actually know what went on here thanks to the three sems of bio I took.)

Anyway, some fruits release ethylene as a catalyst for ripening. However, it is not the buildup of ethylene that hastens ripening but the sudden decrease, which happened after you took them out of the bag.

This reflects the development of the bananas from the tree where they are enclosed in the petals of the flower itself, then released by bunches.
